Millet Salad Recipe

  • Cooked Varagu (Kodo) millet – ½ cup
  • Boiled Chickpeas – ½ cup
  • Capsicum (chopped) – 2 tblspn
  • Cucumber (chopped) – 2 tblspn 
  • Carrot (chopped) – 2 tblspn
  • Corriander (finely chopped) – 2 tblspn
  • Olive Oil – ½ cup
  • Garlic – 4 pieces minced
  • Lemon juice as per taste
  • Black Pepper
  • Salt
  • Nuts & Seeds (optional)

Prepare the Dressing

In a small jar, add all the dressing ingredients like olive oil, minced garlic, lemon juice, salt, and black pepper. Whisk to combine.

Making the Salad

Add cooked foxtail millet, chickpeas, cucumber, carrot, capsicum, coriander leaves to a large bowl. Drizzle the dressing over the salad ingredients. Toss well to combine.

Top it with your favourite nuts and seeds of your choice if desired, and serve immediately. Or cover and refrigerate until you are ready to serve. Enjoy!

Make Ahead and Storage

  • You can cook the millets and chickpeas up to 2 days in advance and refrigerate them in an airtight container until you are ready to use.
  • Leftover millet and chickpea salad will keep in the refrigerator for 2 when stored in an airtight container. After that, the flavors will start to fade.
